The chokehold Cava Grill bowls has had on my tastebuds and wallet is getting out of hand. So, instead of reaching for my car keys I decided to recreate my new obsession right in my own kitchen. I set out to recreate my custom veggie bowl order with modest expectation. Yet, to my surprise (and to the relief of my wallet), the end result surpassed all expectations. This homemade bowl is full of flavorful veggies, tangy pickled onions, crisp cucumbers, fluffy rice, savory roasted corn, creamy hummus, and a homemade tahini dressing that's undeniably good. This bowl has become my ultimate go-to and really, it would be selfish not to share the recipe!

Roast the Veggies:
Preheat the oven to 375°F (200°C).
Dice all veggies.
In a large bowl, toss the mixed vegetables with olive oil, dried oregano, salt, and pepper until evenly coated.
Spread the seasoned vegetables on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized. Remove from the oven and set aside.
Prepare the Tahini Dressing:
In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, maple syrup (or agave syrup), and ground cumin until smooth and creamy.
Add more water if needed to reach your desired consistency. The dressing should be pourable but not too thin.
Season with salt and pepper to taste, adjusting the flavors as needed.
Taste and adjust the seasoning, adding more lemon juice for acidity, maple syrup for sweetness, or cumin for additional flavor, if desired.
Once the dressing is well combined and seasoned to your liking, it's ready to drizzle over your cava bowl or any other salad or dish you prefer.
Assemble the Bowl:
Add cooked rice to bowls.
Top with roasted corn, roasted veggies, cucumbers, and pickled onions.
Add a generous dollop of hummus to each bowl.
Drizzle tahini dressing over the top of each bowl.
Add a piece of pita bread or sour dough for that true Cava effect!
Serve immediately and enjoy!
