VEGAN SOUTHERN "BUTTERMILK" BISCUITS + JAM

Quarantine has bestowed upon me need to bake, cook and try every recipe under the sun. After seeing Lizzo make jam on TikTok I decided the next morning I would get up and make jam and biscuits. So I woke up turned on some Louis Armstrong and got to baking. It was easier to make than I imagined so I wanted to share the recipe here!



VEGAN BISCUITS


PREP TIME: 15 minutes COOK TIME: 15-18 minutes TOTAL TIME: 30-33


INGREDIENTS:

- 2 Cups of flour

- 1 teaspoon of sugar

- 1 teaspoon of salt

- 1 teaspoon of baking powder

- 1 tablespoon baking soda

- 8 tablespoons of dairy-free butter (Earth Balance is amazing!)

- 1/2 cup of dairy free milk (I use plain oat milk)

INSTRUCTIONS:

  1. Preheat oven to 425 F, butter your baking pan and set it aside

  2. Add flour and butter in large bowl and whisk together until butter is mostly dissolved

  3. Mix in dry ingredients (sugar, salt, baking powder, baking soda)

  4. Add in milk (add more flour or more mix as needed)

  5. Dust clean surface with flour and roll out dough to your desire thickness

  6. Cut out biscuits with biscuit cutter or round cup

  7. Place biscuits in buttered pan and place in oven. BAKE FOR 15-18 MiN. OR UNTIL GOLDEN BROWN



STRAWBERRY JAM RECIPE


PREP TIME: 10 minutes COOK TIME: 10-15 minutes TOTAL TIME: 20-25


INGREDIENTS:

- Strawberries (a handful for half a small mason jar or 17-20 for a full jar)

- 1/2 cup of sugar (You can use less if you prefer)

- 1/2 Lemon

INSTRUCTIONS:

  1. Cut up strawberries and mash them into a puree consistency (you can put them into a ziploc annd crush/roll or throw into a food processor for a quick chop)

  2. Add strawberries and sugar to a medium pan

  3. Add a few squeezes of lemon (taste in between squeezes to determine tartness you like)

  4. Boil mixture for 10-15 minutes (End result should be half reduced)

  5. Add to mason jar to cool

  6. Enjoy!



*Add plant-based Breakfast Sausage and you have a MEAL!
